My amazing Brownies

God, I love brownies! Super easy and quick to make, tasteful, moist and very chocolatey.

I find it quite surprising, though, that you so often get brownies that are not very delightful. Just two days ago I ordered a piece in a café in Naxxar, and it was far from being good. I don’t get it. A cake that is that easy to make – there’s really no reason to get it wrong.

As with my carrot cake that I have postet a week ago, I am bound to easy recipes while living here in Malta. The kitchen of the apartment I share with my colleagues is not properly equipped for any great deeds.
However, aren’t the easiest recipes often the best?

After an incident with the lovely carrot cake (I left it outside over night, and it got invaded by ants…) I needed to get my hands dirty again. So brownies it was.

Personally, I do not like recipes that are too sweet. And I love that slightly bitter taste of cocoa powder (the real thing, do not use instant powder for hot chocolate). It just makes the brownies more intense.
Don’t worry though if you crave sweeter chocolate cakes. Don’t use cocoa powder or replace the dark chocolate by milk chocolate (be careful with the sugar then). That’s the lovely thing about this recipe – you can vary it to your taste. Same thing with the almonds. Use any kind of nuts you prefer, and maybe roast or caramelize them before they go into the batter.

My brownies did not last long. I brought them to the dive center where I work, and my colleagues made sure that this time the ants would not get their share.

And now, writing and thinking of them, maybe I’ll make them again today…
Help, I so wish I could eat as many sweets as I wanted without instantly finding them again on my hips!

  • 250 g butter
  • 200 g brown sugar
  • 5 free-range eggs
  • rum (as desired)
  • 150 g almonds, chopped
  • flaked almonds
  • 1 tablespoon vanilla sugar
  • 300 g dark chocolate (70 %)
  • 2 tablespoons cocoa powder
  • 160 g all-purpose flour
  • 1 tablespoon baking soda


  1. Pre-heat the oven to 170° C (340° F).
  2. Grease a baking pan or line it with baking parchment.
  3. In a large bowl, whisk together sugar, flour, cocoa powder, vanilla sugar, baking soda and chopped almonds. Add as much rum as you wish.
  4. Cut the butter and break the chocolate in pieces. Heat them slowly in a bowl over a water bath until both is molten. Let it cool down to a medium temperature.
  5. Pour the chocolate-butter-mixture over the batter and slowly whisk everything together. Do this by hand or with a mixer on the lowest speed.
  6. Pour the batter into the baking pan.
  7. Spread the almond flakes on top.
  8. Put the tray in the oven. Baking time: 30 to 35 minutes. You do not want the brownies to get too dry, so rather take them out earlier than later.
  9. Cut them in pieces and serve them warm with a scoop of ice cream 🙂


The rum makes the brownies taste amazing. Give it a try, and don’t be too careful 😉

If you crumple the baking parchment, it is much easier to line the tray with it.

Made too much? No problem. Just freeze the brownies and warm them up again in the microwave.

This recipe is not very sweet. If you like your brownies sweet and easy, take less cocoa powder, replace 100 g of the dark chocolate with milk chocolate or use more sugar.
